Easter At Home Recipe: Chef Adam's Scottadita

Without the options of dining at our favorite local restaurants due to the COVID-19 pandemic, we can result in cooking delicious meals at home using recipes from our favorite chefs! Chef Adam from Il Palio's lamb chops are deliciously tender with a perfect tang from lemon juice, garlic, and mint. We can’t wait to give them a try this weekend!

Il Palio’s Scottadita by Chef Adam Rose: 

Yield: Serves 4

Prep Time: 10 mins

Cook Time: 10 mins

Scottadita roughly translates as “burned fingers”, as it is said that this dish is so delicious that you will not be able to wait until it cools before you dig in and enjoy it, burning your fingers in the process.

Ingredients:

16 Lamb Rib Chops

Zest Of 2 Lemons

1/4 Cup Fresh Mint

1/3 Cup Olive Oil

2 Cloves Garlic

Sea Salt & Cracked Black Pepper

  1. Pick the fresh mint leaves and fill a half cup packed

  2. Chop the mint leaves

  3. Zest the lemons

  4. Mince the garlic

  5. Combine chopped mint, garlic, lemon zest and olive oil

  6. Marinate the lamb chops and season with sea salt and pepper

  7. Grill on hot grill to desired temperature, I like mine rare to mid-rare and charred hard on the outside, about 3-5 minutes per side depending on the grill
