Chef Kevin's Short Rib Grilled Cheese

It’s a chilly day here in Raleigh, NC and we can’t think of anything better to warm us up than Chef Kevin of 41Hundred’s super cheesy Short Rib Grilled Cheese. This is a customer favorite packed with delicious flavors from crimini mushrooms, caramelized onions, tender braised short rib and lots of… butter. It’s a lunch worth splurging on a December day so head to 41Hundred or thanks to Chef Kevin, make it at home!

Short Rib Grilled Cheese

4oz braised short rib

1oz crimini mushroom

1oz caramelized onion

2oz veal stock

3-4 slices of jalapeño

1oz caramelized onion

2 slices of Munster cheese

2 slices of American cheese

salt and pepper

2 slices Asiago bread

butter

1. Sauté mushrooms, jalapeños, & caramelized onion for 2-3 mins on high heat. Add short rib and veal stock.

2. Cook until stock has reduced by 3/4. Fold cheese into short rib mixture, season with salt and pepper to taste.

3. Generously butter to both sides of each slice of Asiago bread and toast both sides. Remove from heat and build sandwich by adding short rib cheese mixture.
