Chef Tom Cuomo Announces Reinvented Space and Menu for Papa Shogun

Chef Tom Cuomo is excited to announce a reimagined atmosphere and tasting menu at Papa Shogun, his unique restaurant concept featuring classic Italian dishes that incorporate traditional Japanese ingredients and techniques. Chef Cuomo's newly invented space and menu will reopen to the public on Wednesday, Dec. 11, 2019. The first week will be devoted to dinner hours only, with regular lunch and dinner hours returning after the first week. Papa Shogun is located in Seaboard Station at 111 Seaboard Ave. #118, Raleigh, NC 27604. Chef Cuomo's new Italian-Japanese tasting menu concept will be the first of its kind on the East Coast.

The Food

Dinner
Papa Shogun's new menu is inspired by Chef Cuomo's passion for Italian + Japanese fusion, along with a new fine dining flair. Chef Cuomo will be introducing a five-course tasting menu during dinner that will include Fresh Mozzarella and Kombu Bread, a vegetable course, pasta course, main course and dessert. Dinner will be by reservation only, with a small bites menu available for walk-ins as well. Chef Cuomo will change the dinner menu every 2 to 3 weeks to keep it fresh and exciting for diners. You can expect a variety of fish and meat options as well as two choices for the pasta and main courses. Papa Shogun will have alternatives for allergy purposes, but this will need to be noted upon making reservations. Dinner hours will be Wednesday-Saturday, 6pm-9pm.

Lunch
The restaurant will continue its newly introduced counter service lunch menu with affordable sandwiches and salad options. Papa Shogun will be open for lunch Wednesday-Saturday, 11:30am-2pm.

The Drink
Papa Shogun will offer a wine, beer, sake, or cider pairing for each course. The pairing that the restaurant uses each evening will not be available on the regular drink menu. Papa Shogun hopes to develop a sake, wine and cider cocktail menuthat will also include non-alcoholic cocktailsin the coming weeks after reopening. The menu will include 3 to 4 options that will rotate with the seasons.

The Space
Papa Shogun will remain the fun atmosphere that everyone enjoys, with refined elements for a more elegant dining experience. The team is excited to share their stunning "candle wall" that displays multiple candles for an intimate and relaxing dinner vibe. Chef Cuomo's wife Katie will act as the front-of-house captain, and the limited seating will allow the Cuomos to have a special experience with each diner. Chef Cuomo will also be changing the dinnerware to reflect the new changes to his menu.

Chef-Owner Tom Cuomo honed his craft under Wylie Dufresne at WD-50, Mario Carbone and Rich Torrisi at Carbone and Parm in New York City, and most recently under Matt Kelly at Mateo Bar de Tapas in Durham, NC. In between all of that, he's helped open and run restaurants in Los Angeles and Florida.
