Gnocchi à La Parisienne

1 cup water

4 oz butter, small diced

1 teaspoon kosher salt

1+1/3 cup flour, sifted

3 to 4 eggs

2 Tbspoon Dijon mustard

1/2 cup of Parmesan or emmenthal or gruyère

Boil the water with butter and salt

Don’t let it over boil!

Incorporate the flour with a wooden spatula, mix well and put back on a fire slow to medium, and let cook for 5 minutes, until it smell good.

Put on the side, add the Dijon, cheese, mix well, very well.

Incorporate the egg, one by one and guess what! Mix well!

Now you have the pate à choux and I will show you how to make the gnocchi à la Parisienne on our LIVE video. = Chef Serge
