Hawaiian Recipes with Jennifer Rice

We’re packing our leis and *virtually* heading to Hawaii with food journalist, Jennifer Rice, on Instagram LIVE! To join in on the fun tomorrow evening, we wanted to make sure you have the recipe for the delicious Hawaiian recipes we’ll be making together!

Jenn will be walking us through a Kuleana Rum Cold Toddy & Hawaiian Maid, Ahi Poke, and Hawaiian Chicken Wings.

Hawaiian Pupu Chicken

Don’t let the name full you, this Hawaiian specialty is delicious. Jenn will be making this dish as well, but in a smaller portion. This recipe is from BigOven.com.

INGREDIENTS

5 lbs. Chicken wings or thighs ; (segment wings)

1 cup all purpose flour

2 to 3 cups vegetable oil (for frying)

2 cups soy sauce 1 cup sugar 2 cloves garlic ; minced

6 to 8 each green onions ; chopped, with tops

1 heaping tsp. dried red chili peppers ; (or other hot pepper)

1 teaspoon black pepper

1 teaspoon salt

INSTRUCTIONS

1. If you have a deep fryer, great, if not pour oil into a large saucepan, filling no more than half full. Heat pan while you prep chicken.

2. Put flour, salt, and pepper into a plastic or paper bag, shake to mix.

3. Put a few pieces of chicken into bag and shake to coat - shake off excess flour.

4. Fry chicken, a few pieces at a time in hot oil - about 15 minutes will give you a richly browned finish.

5. While chicken is cooking, put soy sauce, sugar, garlic, chili pepper, and half of the green onion into a medium pot, and warm so sugar melts and flavors meld. This doesn't have to boil, just warm, then you can shut it off.

6. As chicken finishes, grab pieces with tongs, shake off excess oil, and drop into soy mix. I let them sit in the mix until I refill the fryer with more pieces.

7. Shake off excess soy mix and place chicken in a serving pan.

8. Continue until all your chicken is done, then sprinkle the remaining green onions on them like a garnish, and watch everyone's eyes light up when they have a taste!

NOTES

This is an easy recipe, take your time. Experiment with different peppers, adjust the soy, sugar, and salt to your taste, and enjoy!
