Recipe: Chef Drew Smith's Bo Luc Lac

Bo Luc Lac

1# beef, sirloin/strip/ribeye, 1in cubes

5 cloves garlic, minced

2 T brown sugar

3 T soy

1 T oyster sauce

2 t fish sauce

1 red onion, sliced thinly

1 T sugar

2 T rice wine vin

2 T soy

2 T water

10 Cherry tomatoes, halved

1 Cucumber, sliced 

6oz Arugula

Cooked white rice 

Things on hand:

Kosher salt

Olive oil

Rice wine vinegar

Pepper grinder

In a large bowl, combine first 6 ingredients and marinate for 30 minutes. 

Combine the next 5 ingredients and coat the onions well. 

In a large sauté pan or wok, heat 2 T vegetable oil until very hot and shimmering. Add the beef and sear on all sides. Shake the pan to coat each piece well. 

Add final 3 salad components and season with salt and fresh cracked pepper. Dress with olive oil and a splash of rice wine vinegar. 

Arrange salad on plate and spoon meat on top. Garnish with onions and cilantro and serve with white rice. Enjoy!
