Raleigh Rolls Collaborates with Chef Teddy Diggs to Create Coronato Tiramisu Rolls

In January 2020, Raleigh Rolls launched their new "Chef Series," where the ice cream company collaborates with Triangle area chefs and artisan food makers to launch monthly ice cream specials. In February, Raleigh Rolls will collaborate with Chef-Owner Teddy Diggs of Coronato Pizza to turn his signature Coronato Tiramisu into a Raleigh Rolls creation.

These delicious ice cream rolls have a creamy base that is combined with coffee soil— an espresso crumble made in-house at Coronato— and mascarpone zabaione. The rolls are then topped with more marscapone whipped cream, Amarena cherries, and gold sprinkles; the gold being an ode to the signature gold crown found in Coronato’s logo. The cost per serving of this decadent Raleigh Rolls dessert is $9.

Teddy Diggs, chef and owner of Coronato Pizza based in Carrboro, N.C., has a unique spin on tiramisu. Instead of traditional lady fingers, he uses a coffee soil. You can find this popular dessert on Coronato's menu for a sweet finish to your meal. Diggs looks forward to bringing his treat to the City of Oaks and to experience his tiramisu in the form of rolled ice cream.
