Friends of Tabletop Restaurant Edition: Chef Teddy Diggs from Coronato Pizza

Last year, we started a monthly series highlighting the many social influencers and bloggers who have become not only our colleagues, but our friends throughout our journey with Tabletop Media Group. Well, we recently decided to include clients and people in the restaurant community with a new series called: Friends of Tabletop, Restaurant Edition. We hope for this new series to highlight folks that we admire and love working with + give a little peek into their world and background.

With that being said, we’d love to introduce our November feature, Chef Teddy Diggs from Coronato Pizza! Check out our fun Q&A with him.

Tell us about your position at Coronato.

I opened Coronato in August on 2019 and have worked in every position since! The concept and menu is styled after the modern Roman pizzerie in Rome which I fell in love with during my visits to the Italian capital. I am the acting executive chef at Coronato, but I fill in as a service manager, line cook, dishwasher, server, or whatever is needed!

What's your favorite thing about working in the Triangle?

We have a lot of terrific smaller communities inside the larger Triangle community. Each micro community is unique and special and that makes our larger Triangle community even stronger, more passionate, and more diverse.

What's your favorite dish to eat?

Pizza of course!

What's your favorite pizza at Coronato?

It really depends on my mood! I like things simple so sometimes (most of the time) I really like our marinara pizza which is just simply tomato sauce, shaved garlic, and oregano. If I am feeling really fancy I will add our house made vegan ricotta, baby arugula and olives to it!

What's your favorite restaurant in the Triangle (other than Coronato)?

There are so many wonderful restaurants and chefs in our area but honestly – I hardly ever eat out these days. I am not sure that I have a favorite place! My family and I do love getting the occasional take-out from Vilma’s Curryblossom Café in Chapel Hill though!

What's the most useful lesson you've learned from being in the restaurant industry?

To take care of others. And the end of the day, I give, with pleasure, so others can experience happiness.

Bonus Question for November: What dish are you looking most forward to eating on Thanksgiving?

My wife’s macaroni and cheese, for sure.
