Rocky Top Catering Tinga Chicken Recipe
Rocky Top Catering is excited to share their special Cinco de Mayo recipe for you to make at your next fiesta! Details for Rocky Top’s Tinga Chicken can be found below. INGREDIENTS:
2 Boneless Skinless Chicken Breasts
¼ Cup Diced Yellow Onion
1 Minced Garlic Clove
15oz Can of Whole Tomatoes
5 Tbs. Chicken Stock
12 Corn Tortillas
¼ of a 7oz can of Adobo Chipotle Peppers
Pinch of Salt
Pinch of Pepper
Vegetable Oil (For Pan Frying)
INSTRUCTIONS:
Chicken:
Add all ingredients to a stock pot or slow cooker & cook until chicken is fully cooked and tender.
Remove chicken breast from sauce and pull apart using two forks until finely shredded.
Return chicken to sauce.
Tacos:
In a medium sized sauté pan, heat oil that is ¼ inch deep to 325 degrees.
Add 1-2 Tbsp. of shredded chicken slightly drained to the center of the corn tortilla and fold.
Using tongs, place the folded tortilla in the heated oil and cook till golden brown and crispy.
Then flip and repeat on the uncooked side.
Enjoy with a margarita! 🍹
